The legend goes, that, when Prince Vladimir set out to choose a faith for Kievan Rus, he sent emissaries to collect information about various existing religions. When the emissaries returned from Constantinople, they were so awed by the Byzantine architecture and design of the Hagia Sophia that they did not know if they were «in Heaven or on Earth.»

Yaroslav the Wise, who continued the Orthodox tradition by setting up centers of learning and law in Kievan Rus, also founded St. Sophia Cathedral in response to Rus’s adoption of Orthodoxy. This cathedral, which has been many times rebuilt and added to, retains little of the original structure. However, St. Sophia Cathedral remains an important historical, cultural, and religious symbol for Kiev, Ukraine, and Orthodoxy.

 

The Nikitsky Botanical Garden

One of the oldest (founded in 1812) of the world’s botanical gardens is Nikita Botanical Gardens (NBG or, for short, the Gardens or Nikita). It is a large scientific research institute as well as a beautiful tourist attraction. The Gardens belong to the Ukraine Academy of Agrarian Sciences (UAAS). The main direction of its work is the study of natural flora and vegetation, collection of plants, introduction of new varieties and selection of some for industrial fruit culture and floriculture. Nikita (not just the Nikitsky Botanical GardenGardens but a nearby small town by that name) is situated in the Crimea on the picturesque coast of the Black Sea not far from Yalta. NBG has branches elsewhere in Crimea and in the Kherson region of Ukraine. The total area of the NBG is 1100 hectares. NBG’s coastline is 6 kilometers.

Borshch

Borsch is popular all over Eastern Europe, but Ukraine and Russia are perhaps most famous for this beet soup. There are as many recipes as there are babushki who make it. Borsch can be served hot in the winter and cold in the summer, may contain meat and a variety of vegetables, and is commonly served with a generous dollop of sour cream.
